bluSummer is super hectic for me and my beach loving family! Being 5 minutes from a resort town we get slammed with family and friends visiting and my business takes off for the summer with all the travelers headed my way from the big cities. So, when Sundays finally get here, I’m super excited not to be jumping out of bed at 5:30 am to teach Pilates on the Beach classes or running to my next food and cooking demonstration. Instead I curl up with my little ones a little longer and shuffle my feet to the kitchen to make our traditional Buckwheat Pancakes with seasonal fruit for the week. This week it was blueberries. I personally filled up a huge bucket of freshly picked berries Saturday afternoon so we were fully prepared.

So as I struggled to make our famous pancakes, trying to keep both eyes open. I thought “I need a smoothie to pick me up this morning.” I tend to just throw things together most times to see how they turn out. Looking around my counters spewing fresh fruits and vegetables I grabbed a few things here and there, and new smoothie was born!

My daughter was so excited about the color so I just tagged a name to it and it was all over from there. I only got the small glass you see in the picture. The other 3 people in my house drank the other 60 ounces without me. :( So, here’s my Blue Hawaiian smoothie. Perfect for hot summer days and groggy Sunday mornings.

Ingredients:

• 2 1/2 cups of Almond milk

• 1 1/2 cups of fresh blue berries

• 1 orange

• 1 cup of fresh pineapple

• 1 teaspoon of Spirulina (you can use spinach or any kind of plant protein to sub if needed)

• slice of orange for garnish

• Ice

Directions:

1. Add all ingredients into an immersion or high-speed blender like a Vitamix. Blend on high until completely blended. Pour into a glass, add garnish and serve.
